Since starting my little diet at the beginning of the year , I find myself cheating through out the day. It is so hard to be a full time mama and be home all day and not eat junk. The kids want gummie bears so I have a few too. They want a cookie, oh why not, I will have one too. It’s the worst. I don’t necessarily need to loose a whole bunch of weight, but I want to be healthier. Oh and maybe loose a few pounds. Do any of you have some great tips with this? How do you be a mom and be home all day and not be tempted to eat all day long? Please share your tips with me. I need help!
I have been doing pretty great with cooking healthier/less calorie dishes at night though. Not only am I trying a diet my husband is as well. It makes it easy when he is home to eat healthier for sure. This white beans and chicken served over rice is one of our families new healthy dish to eat. I do a similar dish black bean and sausage that we love! I thought, lets try a beans and chicken dish over rice. It was great. The kids loved the chicken the most. My kids are big meat eaters. They gets plenty of protein that’s for sure.
White Beans & Chicken over Rice
6 chicken tenders
2 cups of chicken broth
2 cans of cannellini beans
1 can of diced tomatoes
2 tsp of garlic powder
1 tsp of dried oregano
1 tsp of dried parsley
1 tsp of dried basil
1 T of olive oil
1 cup of white or brown rice cook according to directions on bag
Place the chicken on a cookie sheet lined with foil. Sprinkle garlic salt on each side of tender. Broil your chicken tenders until they are no longer pink.
Once the chicken is cooled off a little Chop it into bite size pieces. Set aside.
In a large pot add the beans, tomatoes, seasonings, oil and chicken. Bring to a boil. Mean while cook your rice.
When I serve this I fill the bottom of the bowl with the rice, then put a cup or so of the beans and chicken on top. We like to top it with Parmigiano Reggiano cheese. It pairs great with this dish! Enjoy!
