I have another dinner in 30 minutes for you. I know we all like quick dinners. I feel like the summer days drag on forever because there is so much to do lately. It could be because we are trying to do different projects on the house we are living in, or because there is just more day light to do things in.
For this reason I like quick and easy dinners in the summer. Also it’s nice to not use your oven in the summer and heat up your house. Hot oven plus warm summer evening equals melting mama. J

1 lb of thawed ground hamburger
1 T of Garlic salt
¼ c of dried onion flakes
1 ½ T olive oil
1 larger onion- sliced
3-4 small sweet peppers-sliced
1 can of chunk pineapples
4-5 T apple cider vinegar
2 T of soy sauce
Pinch of salt and pepper
2 T flour
Brown rice
Cook as much brown rice as you would like to serve the meatballs over while you are preparing the meatballs. In a small bowl place ground hamburger, garlic salt and onion flakes. With your hands mix the burger and seasoning together. Place olive oil in frying pan over medium heat. Heat oil. Roll hamburger into 1 to 1 ½ inch meatballs, and place them in the pan. Add onions and peppers to pan as well. Cook meatballs on medium heat until browned completely. In a small sauce pan add pineapples, soy sauce, vinegar, salt, pepper and flour. Heat over high while stirring constantly until thickened. Add a dash or two of garlic salt for taste. Serve meatballs over brown rice with sweet and sour sauce on top.
