Strawberry- Blueberry Cake

strawberry-blueberry cake

Once again I was in search of a good dessert to take for Sunday dinner at my in-laws. I had lots of strawberries and blueberries in the fridge, so I came up with this quick and easy cake in a pie pan. It is so refreshing to have fruit with cake. I almost prefer it over a chocolate cake. I love this time of year because you can get fruit so much cheaper, and it tastes so much better. I wish it could be summer all year long. Hope you enjoy this yummy cake.
16 T of butter, and a little more for pie pans
3 c of all-purpose flour
2 cups of sugar
3 t of baking powder
1 t of salt
2 large eggs
1 c of buttermilk
2 t of vanilla
Strawberries hauled and halved
1 cup of blueberries
Preheat oven to 350 degrees. In your blender mix butter, sugar, eggs, buttermilk and vanilla together. Add flour baking powder and salt to the buttermilk mixture. Blend together until blended well. Spray pie pans with non-stick spray. Pour batter into two pie pans. Spread around to make it even. Top with as many strawberries and blueberries as you would like. Bake at 350 degrees for 10 minutes. Then reduce heat to 325 degrees. Bake until golden brown on top. Serve with more berries and ice cream on top.
