I absolutely love spaghetti squash. My mom grew some in her garden this year and gave me one a week ago. She loves it too, and I think grows it in her garden just for her. She is the only one who likes it at her house. I am so glad that we moved home once again so I can enjoy my family of course, but spaghetti squash from my mom’s garden!

My squash sat on my counter for a week before I did anything with it. Last fall I made a really yummy spaghetti squash spaghetti. I wanted to share the recipe with you all, so I made it again this weekend. My kids love spaghetti meat sauce so, it’s perfect to cover the squash up with to get them to eat it. Super mom once again. Just kidding, but really they love it! Hope you all do to. Enjoy!


1lb of hamburger, browned

1 onion, diced

1 small red & yellow bell pepper

1 small spaghetti squash, baked at 350 degrees for 1 hour

1 tsp olive oil

1pkg of truiva

2 small cans of tomato sauce

1 small can of tomato paste

1 large can of diced tomatoes, drained

1 Tbs of butter

1 Tbs garlic powder

1 Tbs fresh basil, chopped

1 Tbs fresh parsley, chopped

1 Tbs fresh oregano, chopped

salt & pepper

Remove your spaghetti squash from the oven and let cool. While it cools brown hamburger with onions and peppers. Add a little bit of garlic salt or salt & pepper to the meat. In a sauce pan bring to boil tomatoes, tomato sauce, tomato paste, garlic powder, basil, parsley, and oregano, truvia, and salt & pepper. Cut your squash with a large knife hot dog style. Remove seeds from the top of both sides, and throw them away. Using your fork scrape the insides from the rhine. It will look like spaghetti, hence the name. Put the squash in a large frying pan with butter and garlic salt. Heat up until butter is melted and squash is warmed.

Add tomato sauce to meat. Add meat sauce on top of squash and serve warm with Parmesan cheese on top.
