
I am always trying to come up with new, good recipes that my family will enjoy. Sometimes I fail and sometimes I succeed. It’s all about the effort right?? My husband and kiddos are wonderful people for putting up with me. I enjoy putting new dishes together, and sharing them with you all. This one is super easy to throw together. I sorta love these dishes that are kind of toss all in baking dish and cook. How easy, right?? I love buying the chicken tenders from Costco, the Kirkland brand. They are super easy to take out in the afternoon and toss in whatever casserole you are making. This one included. Hope you enjoy my Southwestern Chicken Casserole.
6 chicken tenders
1 can of corn
1 can of black beans
1 can of chicken broth
1 c. of brown rice
1/2 pint of your favorite salsa
1 T of chili powder
1 1/2 t of garlic salt
1 t oregano
Preheat oven to 400 degrees. Spray your casserole dish with non-stick spray. Add rice, corn, and beans to dish. Mix together. Add chicken tenders on top. Pour chicken broth in dish. Add salsa, chili powder, garlic salt and oregano to top of chicken. Bake for 1 to 1 1/2 hours or until chicken and rice are done.
