Soft & Chewy Ginger Molasses Cookies

These cookies are one of my favorites. I was that crazy kid that always loved the store bought hard crispy ginger snaps. Now that I am grown up I love this soft and chewy recipe for ginger molasses cookies. The smell of ginger, molasses and cinnamon reminds me of the holidays. While eating these cookies I just savored each and every bite. They really are a great combo of soft and chewy on the inside but crispy on the outside. They are a great cookie for the holidays to deliver to your neighbors, friends and family. I loved the smell of them baking in my oven as well. Can’t wait for the up coming holidays. Enjoy!!

1 c. sugar


3/4 c. shortening

1 egg

1/4 c. molasses

2 1/4 c. sifted flour

1 3/4  t. baking soda

3/4 t. ground cinnamon

2 t. ground ginger

1/2 t. ground cloves

1/4 t. salt

1 T water

Sugar to roll the cookies in.

Preheat your oven to 350 degrees. In your mixer cream sugar, shortening, egg and molasses. In a different bowl mix together sifted flour, b.soda, cinnamon, ginger, cloves and salt. Then add this flour mixture to the wet ingredients. Mix well, and add the 1 T of water to the dough.

Roll the dough into about 1 inch balls. Roll them in sugar, and place on cookie sheet covered in wax paper.

Make sure to press the cookie flat a little bit. Bake for 8-10 minutes. Let cool for 5 minutes before moving to cooling rack.
