
I am loving all these pumpkin recipes for fall this year. I am sure you couldn’t tell at all with my last few posts. Lol. Hope you all are enjoying them as much as my family and I are. As well as enjoying this beautiful fall season this year. I am loving this so called Indian summer time. If the weather would stay at 65 or 70 degrees until Christmas I would be one happy Wyoming girl. I hope you all are geared up for Halloween. We are all set for next week. I just finished my kids costumes. We have a trunk & treat on Tuesday, school party Friday and then the big trick or treating that evening. I can’t wait to get my kids in their Mickey & Minnie costumes. I am still in the works for my costume, and I am sure my husband will go as him. Well, while you are gearing up for Halloween, make these yummy waffles for dinner, lunch or breakfast. They will be a hit at your house for sure. Enjoy!
- 2 cups of flour
- 3 tablespoons of brown sugar
- 2 teaspoons of baking powder
- 1 teaspoon of baking soda
- 1 teaspoon of pumpkin pie spice
- 1/2 teaspoon of salt
- 1 1/2 cups of milk
- 1 cup of canned 100% pure pumpkin
- 1 egg yolk plus 3 egg whites
- 4 tablespoons of melted cooled butter
- 2 tablespoons of apple cider vinegar
In a separate bowl mix together flour, brown sugar, baking powder, baking soda, pumpkin spice and salt. In your mixer beat the 3 egg whites until stiff, and set aside. Mix your pumpkin, milk egg yolk, butter and vinegar in with the dry ingredients until well mixed. Once that this mixed well, fold your egg whites in to your waffle batter. Now heat up your waffle iron and get to making those waffles. Serve waffles hot with butter and syrup.
