I have to admit that I am addicted to anything pumpkin spice flavored. I love when you walk through the grocery store and you know it’s fall time. You know it’s fall time because of all the egg nog, pumpkin pie, and pumpkin puree. Of course the stores put it out way before it’s close to fall time. It doesn’t bug me one bit though.
I bought 4 or 5 cans of pumpkin puree in September just because I like to use it often during the fall season. Today I finally whipped a can out. My 3 year old has been begging to make cupcakes with me for days now. After I picked her up from preschool she asked again. I talked her into these super yummy pumpkin cream cheese muffins. The cream cheese in them seriously tricked her. The cream cheese filling taste just like frosting to her. It was creamy and sweet. She kept saying, “Mom I love the frosting on these pumpkin muffins.”

Pumpkin Cream Cheese Muffins
3 cups of flour
1 tsp of cinnamon
1 tsp of nutmeg
1 tsp of ground cloves
1 Tablespoon of pumpkin pie spice
1 tsp of salt
1 tsp of baking soda
4 large eggs
2 cups of pumpkin puree
1 1/4 cup of vegetable oil
Filling
8 oz cream cheese, softened
1 cup of powdered sugar
Whip together your filling first in a small bowl. Let it chill while you mix together your muffins. Pre-heat the oven to 350 degrees.
Mix together all your dry ingredients. Flour, cinnamon, nutmeg, cloves,pumpkin pie spice, salt & soda.
Now add all the wet ingredients to the dry ingredients. Add eggs, pumpkin puree & oil. Mix together well.
Fill your muffin tin with muffin liners. I always spray them with a little non-stick spray. Fill the bottom just a little bit of the muffin batter. Put a small spoon full of the filling on top. Then add more muffin batter on top to cover the filling.
Bake the muffins for 25-30 minutes. Let cool before eating though. The cream cheese inside gets very hot. Enjoy these yummy muffins with a cup of hot coca or cider. It makes for the perfect fall treat.
