Happy Cinco De Mayo!!! How did you all celebrate this wonderful holiday?? We have been enjoying these scrumptious pork carnitas the last little while. We made them Friday night, and then had them on Saturday for lunch as well. We love them that much!

Just a little tid bit about Cinco De Mayo to inform us all why we celebrate Cinco De Mayo in the United States. It started in Mexican/American communities in the American West to commemorate the cause of freedom and democracy during the American Civil War. Today we celebrate it to give thanks to Mexico for fending off the French invasion in the USA.

Source 

Pork:

1/2 pound of Pork roast

1/2 pound of bacon

1 T of garlic salt

1 T of taco seasoning

1 pinch of chopped cilantro 

To start out cook your bacon until completely cooked through. Remove from pan. Once cooled and dice it up. Chop the pork roast into small bite size cubes. Cook pork in pan that you cooked the bacon in until completely cooked. Then toss 1/2 of the bacon bits in with pork, pinch of chopped cilantro, taco seasoning and garlic salt. Stir together and heat on medium heat for 5 more minutes. 

Beans:Take 1/2 cup of cooked red beans. Heat them up in microwave until hot. Using a fork mash the beans up to a re-fried bean consistency. Add 1 tablespoon of garlic salt, 1 tsp of taco seasoning. Add 1/3 cup of diced bacon bits. Mix all together, and reheat in microwave for a couple more minutes right before serving.

Corn Tortillas:

Heat your tortillas in a frying pan on medium high heat. Add a tablespoon of olive oil to pan. Heat the oil until bubbling. Add tortilla. Cook each side for 1 minute or until golden.  

Toppings:

chopped cilantro

chopped tomatoes

1/2  thinly sliced onion, sauteed  

1 thinly sliced bell pepper, sauteed 

sliced purple cabbage

1 avocado, sliced

lime juice

sour cream

Slice onions and peppers and saute them in a little bit of olive oil until tender 

Take a warm tortilla, place beans and sour cream on tortilla. Next add your meat, and onions and peppers. Top the carnita with the rest of the toppings. Squeeze a half of a lime on top. Eat up and enjoy!!!
