One-Pan Chicken Broccoli Casserole

I wanted to share this one-pan recipe with you all because I just love it! I love one-pan recipes because you literally use one pan whole time you prepare this dish. How amazing is that? Pretty amazing if I say so myself. I also love casserole recipes as well. They are super easy to prepare. They also last my family a couple of days. Which means leftover. Which is kind of nice sometimes for the chef. First of all this dish has rice, chicken, cheese and broccoli. You can’t get any more simple and delicious for one dish. 6-8 chicken tenders, chopped into bite size

1 onion, diced

2 1/2 cups of chicken broth

2 1/2 cups of broccoli, chopped

1 cup of white rice

2 cups of shredded cheese

pepper

garlic salt

olive oil

Lets start with the basics on this dish. Heat up about 1 T of olive oil in the pan. Toss your chicken tenders that are diced in the bite size pieces and chopped onion. Sprinkle with a little pepper and garlic salt. Simmer on medium heat until chicken is completely cooked through.

Next, push all the chicken and onions over to the one side of the pan. Put another tablespoon of olive oil on the side with nothing on it. Next pour your 1 cup of rice on the hot oil. Saute for a couple of minutes before adding the chicken broth. Add the chicken broth and bring to a boil until the rice is almost done.

Add your chopped up broccoli and half of the cheese next. Simmer covered with the lid,while stirring often for about 2 minutes.

Before serving sprinkle the rest of the shredded cheese on top and keep covered until ready to serve.
