Today is my husband and I’s 7th anniversary. Time has flown by so fast. I am so glad that I married Matthew 7 years ago. We have shared so many memories, happy times, sad time, trials and the best of times together. I am very blessed to share those moments with him. One of our wedding gifts was a nice little ice cream maker. We have used it plenty of times and loved it. Using a ice cream maker takes time and lots of preparation. Last night I decided I wanted to make a dessert for us to enjoy on our anniversary. This no churned blueberry ice cream was the way to go. It was super easy. All it takes is 3 ingredients, mix it and toss it in the deep freeze over night. It tastes just like I put all the time and effort into it. Oh and of course the love. Everything homemade is made with love. Anyone else celebrating a anniversary today or soon with their love of their life? We have lots of friends who were married in August. It was the month to get married 7 years ago. Enjoy this perfect ice cream with your perfect loved ones!

1 pint of heavy whipping cream

1 14 oz can of sweetened condensed milk

1 pound of fresh blueberries

blue and red food coloring (optional)

Whip together the whipping cream and sweetened condensed milk until it has stiff peaks.

Take a little over half of the blueberries and smash them with either a fork or spoon in a separate bowl. Add them to the whipped cream. And mix well. Add 3 drops of red food coloring and 2 drops of blue food coloring if you want to make your ice cream a little more purple in color.


Take the rest of the blueberries and fold them into the ice cream mix. With a rubber spatula scrap out all the mixture int a bread pan. Place a little foil on top and place in the freezer over night. Once it is frozen through it will be ready to enjoy with all your loved ones.
