Muffin Tin Meatloaf

Meatloaf is such a easy meal, but quick it is not. Well when it comes to cooking meatloaf it takes at least an hour to completely cook a meatloaf. I need quick, like under 30 minute meals most nights. I decided to try my favorite meatloaf recipe that I use, and make them in a muffin tin. Fast and easy it was. Did I mention that Ian my 3 1/2 year old ate 2 of them. He loved them! I made this for dinner because I know he loves anything with meat. It was a hit at my house, with everyone, especially this mama. I hope that you all have a wonderful Thanksgiving, and are enjoying your warm homes with family. Of course eating lots, and lots of yummy food.

1 pound of ground hamburger


1/2 cup of Italian bread crumbs

1 t of garlic salt

1/2 t of pepper

1/4 c of diced onions or dried onions

2 eggs

1 small can of tomato paste

ketchup

Preheat your oven to 350 degrees. Spray your muffin tin with non stick spray. In a medium size bowl with your hands mix together all ingredients except the ketchup. Place a small handful of meat in each muffin spot in pan. Top with a little bit of ketchup. Bake for 20-25 minutes until hamburger is cooked.

Some of my favorite sides for meatloaf are mash potatoes/ baked potato and a veggie like green beans. Enjoy!!!
