The other night we had tacos on the menu for dinner. I was trying to come up something besides just tacos. We needed a good side to go along with them. I was wanting to make Spanish rice but I started thinking about it far too late. On Sunday we had corn on the cob and we had about 3 left in the fridge that were cooked, and needed to be used. I came up with this great, kind of spicy side dish to go with the tacos. You can either eat it on the side, or top it on your taco. I liked topping it right on top of the taco. Instead of a hot salsa I put this delicious Mesa Corn on top. It was prefect. Just enough hot to make my taco amazing. I love being successful with my left overs. 🙂
Corn from 3 corn cobs, cut off
1 banana pepper , chopped
1/2 purple onion, chopped
1/2 hot pepper, chopped
1 to 1 1/2 T of olive oil
Dash of garlic salt
Dash of chili powder
Dash of pepper
Heat up the olive oil in a medium size pot. Add the corn, onion and peppers to the pan. Saute until the onions and peppers are tender. Add the seasonings. Serve hot with your choice of tacos. Enjoy!
