Whenever I made chili I gotta have cornbread to eat with it. “Jiffy” corn muffin mix is a quick and easy way to make some corn bread. I like this mix just for that reason. I wanted to load these muffins up a little bit though.

With the amount of jalapeno I put though my 2 yr old and 10 month old loved them. It’s a win for this mom ! This recipe is great for busy moms on the go. Enjoy!
