Remember that little New Year’s resolution I have to eat healthier? This recipe falls under eating healthier for sure. I was doing my grocery shopping at Costco yesterday, and bought a bag of lemons. Have I mentioned how much I love Costco’s produce? It’s my favorite, and it’s usually a fairly good price as well. Monday’s are super busy for our family. It’s our big therapy day for our Ian boy, and of course grocery shopping day. I try to make simple and quick meals on Monday’s. This a new one for the menu board for sure.
Do you all have a day of the week that is so busy that dinner is the last thing on your mind? I know we all have those days, so I hope this recipe will be helpful to you all. Oh and guess what?? With the pasta this meal is 300 calories! That is if you eat 2 chicken tenders and 1 oz of pasta.
It is a low calorie meal that will help you loose those few extra pounds you are wanting. I hope you enjoy this full of flavor Lemon Garlic Chicken!
Lemon Garlic Chicken
3 tsp of coconut oil
6-8 chicken tenders, defrosted
3 lemons, juiced and zest
1 can of chicken broth
2 tsp of soy sauce
1 T cornstarch
1/2 tsp of garlic powder
1/4 cup of dried onions
2 cups of cooked Penne pasta
Melt coconut oil in pan. Once oil is heated add the chicken tenders. Cook until browned on each side.
In a medium size bowl mix together cornstarch, lemon juice, lemon zest, garlic powder, dried onions, broth and soy sauce.
Pour sauce over chicken tenders. Cook on medium high until sauce thickens. Stir often to keep from sticking. Serve over Penne pasta.
