Homemade Granola

My family and I love to have yogurt in the mornings because it’s a quick and easy breakfast during the week. I decided that we needed just a little bit more to our yogurt to keep us full until lunch. I made this super yummy and healthy granola. It is packed full of oats and nuts, so full of protein. This recipe can be modified to whatever nuts or dried fruit you would like to put into it.

  • 2 cups Rolled Oats
  • 1 cup Nut And Dried Fruit Mix
  • 1 cup Coconut Flakes
  • 3 Tablespoons Honey
  • 2 Tablespoons Coconut Oil
  • 1 teaspoon Vanilla
  • 1 pinch Salt

Mix all ingredients together. Make sure that oil and honey are evenly mixed with all the oats and nuts.

Place granola on a cookie sheet covered with wax paper. Bake at 300ºF for 15 minutes until toasted. Store in a closed container in the fridge.

Right at the end of baking my granola I put it under the broiler to get it a little toastier. You don’t have to do this, but I liked it this way. If you do broil it at the end be sure to stir it up a little so it doesn’t burn. I got my nut mix from Safeway. It is called Power Mix. It has soybeans, pumpkin seeds, almonds and cranberries in it.
