I think this is one of my favorite crisp. It taste so tropical and melts in your mouth. I love how easy a crisp or cobbler can be thrown together when you need a quick dessert. We had my husband’s brothers and dad over for dessert the other night, and I needed something easy. This crisp will be my go to when it comes to quick desserts now. I usually always have the ingredients in my pantry to make it as well. Which is even better! Enjoy this little taste of the tropical island of Hawaii.
2-20 oz. cans of crushed pineapple, drained
1 c. flour
1 c. brown sugar
½ t. baking powder
½ t. salt
1 egg
½ c. melted butter
1 t. cinnamon
Coconut flakes
Preheat oven to 350 degrees. Spray your pan with non-stick spray. Spread the crushed pineapple in your 9×9 pan. In medium bowl mix together flour, sugar, baking powder, salt and egg. Spoon the mixture over the top of the pineapple. Pour the melted butter evenly over the top. Sprinkle with cinnamon. Bake at 350 for 45 minutes. With about 15 minutes left of baking cover the top with coconut flakes, and bake the rest of the way. Serve with cream or ice cream.
