Tomato Cucumber and Avocado

T, C & A Salad is my new favorite salad. T stands for tomato. C stands for Cucumber, and A stands for Avocado. I am sure you are all thinking it, is this picture of this salad as good as it looks? I’m telling you it’s amazing!  Do yourself a favor and make this salad and you will know your answer. My favorite thing about this salad recipe is that it is fresh looking. I love salads that are not only yummy tasting but refreshing.


Of course this salad is going to taste even better with nice fresh veggies from the farmers market or your garden. I can see myself making this salad all winter long with my store bought veggies as well.

My kids even loved this salad. They are not big fans of tomatoes and cucumbers, so I wasn’t sure if they would like it or not. To my surprise, they loved it. With those great tasting avocados I tricked my kids into eating a healthy side dish! It’s a win/win for me!

Ingredients

1 1/2 cups of cherry tomatoes, halved

1 large cucumber

2 avocados

1/2 of yellow onion, sliced

Juice of 1 medium lemon ( 2 Tbsp)

1 Tbsp of dried cilantro ( if available fresh cilantro 1/4 cup chopped)

salt

pepper

2-3 Tbsp of olive oil

Prepare

Chop and dice all your vegetable. Place them in a medium size bowl. Toss together.

Add your seasoning,cilantro, lemon juice and olive oil to a small bowl and whisk. Add to veggies and toss the salad again.
