Fresh Apple Nut Cake

My husband has been traveling around a lot for school, and received this recipe from a lady on his travels. She had made it for him and a crew of guys working cows, and he loved it so much, so she gave him the recipe. I made it for the first time a month or two ago, and really liked it too. We have a church party to attend tonight, so I thought I would make it to take. It is an easy cake to bake, and mouthwatering as well. I hope you all enjoy it.

  • 3 whole Eggs
  • 1-¾ cup Sugar
  • 1 cup Applesauce
  • 2 cups Flour
  • 1 teaspoon Baking Soda
  • 1 teaspoon Pumpkin Pie Spice
  • ¼ teaspoons Salt
  • 10 whole Small Apples, Peeled, Cored And Diced
  • ½ cups Chopped Pecans

Preheat oven to 350 F. In a large bowl beat eggs and sugar. Add applesauce. Beat well. Add dry ingredients (flour through salt) and mix well. Fold in apples and nuts.

Pour into a greased 9×13 pan. Bake at 350 F for 40-60 minutes or whenever the cake starts to leave the sides of the pan. Ovens vary in temperature, so time will vary. I usually find that 50 minutes for 10 chopped apples is plenty of time. When done, a toothpick inserted into the center of the cake will come out clean. Remove from oven and serve warm.
