I just discovered basil pesto. My brother in-law was telling us not that long ago that him and his family really like it. They got a big bottle at Costco and loved it! They had a hard time finishing it off though. They went ahead and froze half of the bottle and it was great.When I was at Costco a couple of weeks ago I snatched up some of that Kirkland Brand Basil Pesto. It’s amazing! We have eaten sandwiches , grill cheese, and pork. You name it I have put this Pesto on it. We definitely have not had a hard time using up the bottle at all. On Wednesdays I am gone for meetings in the evening, so I was looking for something quick for dinner. I decided why not put this Pesto on pasta. To make it creamy I thought how about add some cream to it. I didn’t have any cream, so I went with a can of cream of chicken soup. It was great! I shared it with my father in-law who love it as well. Enjoy!
2 cups of cooked organic macaroni noodles from Costco ( bow tie noodles would be great too)
1/2 c. of basil pesto
1 can of cream of chicken soup
2 T grated Parmesan cheese
2 T of butter
6-8 chicken tenders cut into bite size pieces
1/2 onion, chopped
Take your chicken, onion and butter and cook until chicken is no longer pink. Add pasta to pan. Add pesto, cheese and soup. Cook until hot.
