The Christmas season is well among us all. We are all out shopping until we drop, and I mean literally drop. Yesterday I finished up my shopping, and I was sweating when I got done. I gave myself three hours to finish it up. I did it. I am so proud of myself.

Now that you are pooped from shopping, I am sure you don’t want to spend hours and hours in the kitchen baking. These cookies are a quick fix for that. They wont take you long at all to whip together, and bake. They could be a great fit for your neighbor treats, caroling goodies, Christmas parties, whatever you have in mind. They are great combo of craisins, white chocolate chips, oatmeal and coconut. A pure Christmas flavor if you ask me. Hope you enjoy your holiday baking with me, and bake this recipe. 1 cup (2 sticks) butter, softened to room temp

1 1/2 cup of granulated sugar

1/2 cup of packed brown sugar

2 eggs

1 tsp of vanilla

2 cups of flour

1 tsp cinnamon

1 tsp baking soda

1/2 tsp of salt

3 cups of rolled oats

1 cup of coconut flakes

1 1/2 cups of craisins

2 cups of white chocolate chips

Preheat oven to 350 degrees. Cream together butter, sugars, eggs and vanilla. In a medium size bowl mix together flour, soda, salt, cinnamon and oats. Mix together with creamed ingredients. Add coconut, craisins and chocolate chips to dough. Fold then in to dough. Take a Tablespoon of dough and drop it in 12 spots on a wax paper lined cookie sheet. Bake for 10-12 minutes.
