Chicken Tacos

We love shopping at Costco, and this last time we went we bought a huge bag of frozen chicken breasts. I was complaining to my husband that when I buy it from other places I feel like I go through it all in one meal. They just don’t put very many chicken breasts in one bag.


We decided since we had all that chicken we would make chicken tacos for dinner the other night. Tacos is one of our favorite meals because it is quick and easy as well as tasty. It consist of cutting up some veggies you want for toppings, warming up meat and tortillas and bammm you got yourself tacos for dinner. So easy right?? You could always make Spanish rice to go with them. I most often don’t have the ingredients in my pantry for that, so just the tacos makes a great meal.

First things first, you need to defrost your frozen chicken breast. I usually take out 2 big breast for my family of 4. I have a almost 3 year old and 10 month old, so they don’t eat much. You will have the estimate how much chicken you will need for your family. If you remember to take your chicken out ahead of time to defrost in room temperature you are ready to go. If you are like me and forget most the time your microwave will be your best friend at this point. Once you have defrosted your chicken you will need to cut the chicken into bite size pieces. You can also cut up your toppings ahead of time as well. Dice up as many tomatoes as you would like. As well as some lettuce to top your tacos with.

 

[yumprint-recipe id=’23’]While you are waiting for your chicken to finish up your tortillas need warmed up. I like to add just a few drops of olive oil to a frying pan and place on the stove top at medium-high heat. Once the pan has heated up add a tortilla. Heat each side of the tortilla until it has a light golden look to it. Heat as many tortillas as you think you will eat. I usually do two for my husband and I, and one for each of my kids. Then if we want more they wont get cold while you are eating the already heated ones. I think tacos just taste better with warm tortillas. Hope you all enjoy this recipe.
