Cake Batter Blondies

Box cakes can be the best life savers when you need a dessert. They also can make the for the easiest desserts. I keep box cakes on hand just for this reason. I usually watch for the sales on them at our local grocery store. When they go on a killer sale I snatch up a bunch of them and put them in my pantry, and save them for a rainy day. 🙂 If you like cake batter and sweets this recipe is going to rock your socks off. I took it to our youth activity I was in charge of this last Wednesday for the girls, and they love them. I didn’t have a single one to take home. Which is good because if these sat in front of me too long, I could eat the whole plate.


1 cup of butter, softened

3/4 cup of brown sugar

1/4 cup of sugar

1 (3.4 oz box) instant vanilla pudding

1 tsp of vanilla

3 small eggs

1 tsp of baking soda

3/4 cup of yellow, white or funfetti box cake mix

2 cups of flour

1 cup of white chocolate chips

1/3 cup of sprinkles

Preheat oven to 350 degrees. Cream together the butter, vanilla, eggs and sugars. Add the flour, soda, cake mix to butter and sugar mix. Mix together well. Add sprinkles and chocolate chips and fold them into the batter. I used three different kinds of sprinkles to get 1/3 a cup of them. It made the bloodies fun though! Take a 9×13 Pyrex pan and spray it with non-stick spray. Press the mix into the pan and bake for 25-30 minutes until golden on top.
