Weekends are my days that I actually make breakfast. We are all home with nowhere to really go, so it makes it a little easier. During the week we are leaving at different times, different things going on and so forth. This morning I wanted to try something new from the ordinary pancakes or waffles that I make most times.
I came up with these really yummy muffin tin breakfast bites. They are quick and easy to throw together. My kids loved them! Especially with some ketchup on top of them. Ketchup for some reason makes kids want to eat anything right?? My kids are that way anyways. I hope you enjoy these breakfast bites, and share the recipe with all your loved ones. Enjoy!!!
6-8 eggs
4- Small baked potatoes-shredded
1 Roma tomato-diced
1 c. of diced onion
1 c. shredded cheddar cheese
1 T cottage cheese
¼ t. cumin
¼ t. nutmeg
1 t. dried basil
1 t. garlic salt

Preheat oven to 400 degrees. Spray muffin tin with non-stick spray. Shred the baked potatoes. Sometimes this is a great dish to make after you have left over baked potatoes from the night before’s dinner. Place the potatoes in the bottom half of each spot in the muffin tin. In a medium size bowl mix together eggs, tomatoes, onions, cottage cheese, cumin, nutmeg, dried basil, garlic salt and pepper. Pour in the rest of the muffin tin spots. Top with a little of shredded cheese. Bake for 20 minutes.
