 Zucchini Crasin Bread


I love zucchini, and love to bake with it. It can be used from so many different recipes. That is one reason why I love it. You can fry it up, put it in bread, muffins, cookies, you name it zucchini can be put in anything and be amazing!

Now lets get to the yummy stuff. Last year I froze a bunch of zucchini from my mother in-laws garden. I just grated it all and stuck it in freezer bags. It’s great for making quick and great breads like this recipe. I love how healthy and sweet goodness this recipe is though. This recipe is a great way to get your kiddos to eat their zucchini. I use that this trick all the time. You can even toast it in the morning for breakfast, and add a little butter to it for them. I hope you love and enjoy this yummy recipe.

 Ingredients:

1 cup of all-purpose flour

1 1/2 cup of whole wheat flour

1 1/2 cup of sugar

1 T baking powder

1 1/2 tsp of cinnamon

1 tsp of salt

4 eggs

1/2 cup of milk

3/4 cup of olive oil

1 cup of grated zucchini

3/4 cup of crasins

Preheat oven to 350 degrees. Mix together all the dry ingredients. Then add your milk, eggs, olive oil, zucchini and crasins. Mix together well. Spray your bread pan with non stick so that the bread doesn’t stick to the bottom. Put the bread mix into the pan evenly. Bake for about 60 minutes. Check the middle with a fork. If it comes out clean it’s done. If not bake for a few minutes longer until done.
