Zucchini, Carrot, Apple Muffins

My sister Brandy sent me this awesome muffin recipe. I guess you could actually call them Toddler muffins instead of Zucchini, Carrot, Apple muffins. They could trick any toddler into eating their veggies and fruits. Both my nephew and daughter who are 2 years old loved these muffins. Chloe ate at least 3 of them in one day. I would say that’s a win for me and the muffins. My sister said that her little Easton ate two of them in one sitting. Yay, for getting two 2 year olds to eat zucchini, carrots and apples. These muffins are a great start to anyone’s day. A great breakfast food or just a snack on the go.


I loved that I was able to use carrots from my garden in these muffins as well. The zucchini came from a family members garden as well. What a great muffin for this time of year when our gardens are bursting with produce.

3 1/8 cups of flour

1 1/8 cups sugar

2 1/2 tsp cinnamon

1 tsp of nutmeg

1/4 tsp of baking soda

1 tsp of salt

3/4 tsp of baking powder

2 cups of shredded carrots

2 cups of shredded apples

2 cups of shredded zucchini

4 eggs

1/2 + 1 Tablespoon of oil

2 1/2 tsp of vanilla

Combine all dry ingredients and sift together in the mixer.

Combine the fruit and veggies and add all the wet ingredients in a large bowl.

Add the wet ingredients to the dry ingredients in the mixer bowl. Combine well.

Scoop batter into lined muffin tins.

Makes about 24 muffins.

Bake at 400 degrees for 14 minutes. Watch so they don’t burn and over cook.

Place on cooling rack and enjoy!

Tip: If you don’t have apples you can do 2 cups of mashed bananas instead.
