Watermelon Lime Sorbet


It’s a scorcher outside! Yesterday, we were at our little towns celebration parade. If you don’t get there super early, you don’t get seats in the shade. Which is usually just fine with us because the kids like to be next to the street to catch candy. It was about 90 degrees or hotter out there watching the parade. I could of killed for a drink or something cold to cool me down. I was just melting out there helping my little 2 year old catch candy. After the parade was over we had a little BBQ at our house with my husbands parents. We had hot dogs, burgers, fruit, chips and beans. We had just a little bit of watermelon left after lunch, so I decided to make something refreshing and cooling. A watermelon sorbet was just the thing we needed to cool down.

6- 8 cups of watermelon

1 cup of water

1 cup of sugar

2 limes

Slice the watermelon and put it in the blender or food processor to puree it. You might have to add just about 1/3 cup of water to the watermelon to start the puree.

Meanwhile boil the sugar, water and juice from one lime on the stove. Boil until the sugar is dissolved. Remove from pot and place in a medium size bowl in the fridge to cool down. Toss a lime that is peeled in with your pureed watermelon, and pulse your blender to blend well. Once your syrup in the fridge has cooled down some toss in the blender with your watermelon puree. Blend for just a minute. Pour the puree into a 9×13 pyrex pan with a lid. Freeze over night before serving.
