The Best Chewy Caramel Popcorn

The best chewy caramel popcorn

I love a good chewy caramel popcorn. I am not a huge fan of the hard caramel popcorn. I love the kind that sticks to your fingers , the gooey kind. It’s the best caramel popcorn ever! I have the recipe for this best caramel popcorn ever. It super easy and can be made quickly. I work with the young women in my church and we had a youth activity last night. We have one every Wednesday night with the girls. Last night my 12 & 13 year old’s were in charge of the activity. They chose to make rainbow loom bracelets. The girls always come straight from practice of whatever sport they are playing at the time. I knew myself at that age and I was starving after practice. So I whipped up a batch of this caramel popcorn for the girls to chow on while they made bracelets. I only took one batch, but next time I will be taking two batches. It was gone in no time. I don’t blame them it is the best caramel popcorn. 🙂

1/2 cup of butter

2 1/2 cups of brown sugar

1 cup of corn syrup

1 can of sweetened condensed milk

20-24 cups of popped popcorn

Pop your popcorn first thing. I popped about 4 bags of microwave popcorn to get enough. I made sure there wasn’t any kernels in the batches as well. I would hate for anyone to brake their teeth eating this best caramel popcorn. Then in a large pan heat the butter, brown sugar, corn syrup and sweetened condensed milk. Heat it to a boil and let it boil for 2 1/2 minutes. To check if it is done take some and drop it in a cup of cold cold water. It will form into a soft ball like shape. Or you can use a candy thermometer and once it reaches 235-240 degrees your caramel is ready. I separated my popcorn into two different bowls. Pour half over each bowl of popcorn. Take a rubber spatula and stir the popcorn up so that it all gets covered in caramel. Let cool before eating.
