Summer Garden Spaghetti

We were not able to plant our own garden this summer because we moved into a new house this last fall. The house is only 7 years old, but the previous owners never put in a yard. This summer we have been doing lots of work on putting in a circle drive, fence and yard. Since all our time and money has been spent on those few things, but major, we didn’t have the time to put in a garden. I was bummed because I love being able to go out my front door and pick garden fresh veggies to cook with all summer long. One of my favorite things to grow in the garden is summer squash and zucchini. There are so many recipes that you can make with them.


My husband came home with one big summer squash and a zucchini that someone from work gave him. I was so excited! The next night I whipped up with Summer Garden Spaghetti recipe. It’s now a new favorite at our house.

Summer Garden Spaghetti

5-6 small broiled & sliced chicken tenders

1 cup of diced yellow summer squash

1 cup of diced zucchini

1/2 cup of diced yellow onion

1 cup of chopped spinach leaves

1 cup of grape tomatoes

Cooked Angel hair noodles

garlic salt

pepper

ranch dressing powder

olive oil

1 cup of heavy whipping cream

1- 8oz can of tomato sauce

Shredded Parmesan cheese

Before broiling your chicken tenders: sprinkle them with garlic salt and ranch dressing powder mix. Toss them under the broiler, and cook until golden brown. Remove from broiler and slice in small bite size pieces.

Put your angel hair noodles on to boil. Cook the amount that you will need for the amount of people you are feeding. Once the noodles are cooked, drain and set aside.

Toss the diced zucchini , squash and onions into a pan with 4 Tablespoons of olive oil. Cook on medium high until the veggies are tender. Turn your heat down to a medium low heat and toss the chopped spinach leaves in.

In a small sauce pan put your cream,tomato sauce, 2 Tablespoons of shredded Parmesan cheese,  a dash of pepper and garlic salt. Then bring to a boil. Once the sauce is boiling remove from heat.

Toss your chicken, grape tomatoes, and noodles in with the veggie mix. Add your sauce and stir together. Sprinkle the top with Parmesan cheese and place the lid on your pan. Simmer over medium heat until the cheese is melted. Then dish and serve while hot. Enjoy!
