We got our pumpkins carved yesterday finally. Just in time for Halloween today! My oldest loved the gooey mess from cleaning his pumpkin out. My 3 year old was not impressed though. She did do better this year then last year. She grabbed a glove and got to work once I cut her top off. She asked me, “what can we do with all these pumpkin seeds though mom?” “We can bake them and eat them I said.” She was excited that these seeds wouldn’t go to waste. At first she wanted to plant every single one, so that we could have pumpkins a different time. That wasn’t happening, so I was glad she agreed that baking them to eat would work great!
Spicy Roasted Pumpkin Seeds
2 small pumpkins worth of seeds
2 tsp of olive oil
1/2 tsp of garlic powder
1/2 tsp of cayenne pepper
1/2 tsp of ranch powder
1/4 tsp of course salt
1/4 tsp of paprika
parchment paper & cookie sheet

Clean your pumpkin seeds off after carving your pumpkins. In a medium sized bowl add all the ingredients to the seeds. Toss until they are covered. Line your cookie sheet with parchment paper and spread the seeds out on the pan.
Bake at 300 for 40 minutes. Remember to stir them once in a while. Let them cool and enjoy!
