Monday night we were up in the mountains for Family Home Evening night. Have I mentioned I live in the most beautiful place in Northern Wyoming? I can see the Big Horn Mountains from my back yard. It’s pretty amazing. Anyways we had hamburgers, hot dogs and a bunch of other great, and yummy things to eat. One of my favorites was the smores of course. There is just something about a roasted marshmallow with melted chocolate squished between two graham crackers. It just hits the spot for sure.
I was craving those ooey, gooey smores today, so I made these yummy smores cookies. They are super good, and I think pretty darn close to having a smore all crammed into a cookie.
1 c. graham cracker crumbs
1 ¼ c. flour
½ t baking soda
½ t of salt
½ c. softened butter
½ c. brown sugar
½ c. granulated sugar
1 egg
1 t. vanilla
1 c. Hershey’s bars- crumbled
½ c. mini marshmallows
Cream together the sugars, egg, vanilla and butter in your mixer. Then add the flour, soda, salt and cracker crumbs. Mix well until completely blended. Fold in the Hershey’s bars and marshmallows. Place in 2 inch balls on a non-stick cookie sheet. Place extra Hershey crumbles or marshmallows on top of cookies if desired. Bake at 375 degrees for 8-9 minutes. Cool on cooling rack for a few minutes before indulging into these mouthwatering cookies. Enjoy!!!
