Sometimes it can be hard to remember to eat healthy, when your thinking how much easier it would be to eat cereal for dinner.My husband is a Vet, and sometimes we don’t see him at night time. He has twice a week that he is on call. Those nights it would just be easier to eat cereal. I know it’s better if I teach my kids to eat healthy. I do love to come up with healthy, quick and easy recipes that the whole family will love. Most nights, okay almost every night it’s a rush to get dinner on the table. This Sesame Chicken Stir Fry is the way to go when you are in a rush or don’t have much time to whip up a healthy dinner for your loved ones. It’s got the vegetables and protein your kids need to grow big and strong, but the low calories you love to eat. Enjoy!

8 chicken tenders, cut into 1 inch bite size pieces

1 cup of baby carrots, sliced

1 1/2 cups of broccoli, cut into smaller bit size pieces

1/2 an large onion, diced

2 tsp of coconut oil

1/2 tsp of pepper

1 tsp of garlic salt

1 T of sesame seeds

1 to 1 1/2 cups of cooked brown rice

First things first get all your veggies and chicken chopped up and ready to fry up. Also be sure to put your rice on to cook. Sometimes I get so busy getting the dish ready I forget to get my rice cooked.

Then place 1 tsp of coconut oil in a fry pan on medium high heat. Once it melts the coconut oil a little toss in the onions and chicken. Cook until the chicken is thoroughly cooked. I use this brand of coconut oil, but whatever brand you have on hand will work wonders.

Once the chicken and onions are cooked through you can toss in the rest of the veggies. Also add your last teaspoon of coconut oil to the mix. Sprinkle the garlic salt, sesame seeds and pepper on top. Let simmer on medium heat just until the veggies are all tender. Serve over a little bit of brown rice and top with some soy sauce.
