My husband spent two years in Russia serving a mission for our church. This is why we call this salad a Russian salad. He would eat this or something like it a lot on his mission. It has grown to be a family favorite in our family. I have taken this salad to parties, and it is the first salad to be finished. People that don’t love cucumbers and tomatoes tell me they love this salad. People will ask me how to make it all the time, and I always tell them it’s super easy, and it is. I thank Russia for this salad. It is my go to salad for potlucks or any group party. Hope you all enjoy it!
- 1 whole Onion, Peeled And Diced
- 4 whole Roma Tomatoes, Cored And Diced
- 1-½ whole Long English Cucumbers, Peeled And Diced
- 3 Tablespoons Olive Oil
- ¾ cups Your Choice Vinegar ( Rice, Apple Cider, Balsamic)
- 1 Tablespoon Dried Dill
- Salt And Pepper
Add diced vegetables into a medium size bowl. Add your olive oil and stir. Then add the vinegar, and stir again covering all the vegetables with the olive oil and vinegar. Next add the dried dill, salt and pepper. Stir again. I always like to taste test it, and possibly have someone else taste as well. You might want to add more pepper, salt or dill.
