I love having lots of salad ideas on hand in the summer time. We eat lots of cold salads when we BBQ in the summer time. What are some of your favorite salads you enjoy as a family in the summer time?? I would love to hear all your ideas!

Coleslaw is one of my favorites to have… well all year round, but we eat it lots in the summer time. I usually have purple cabbage on hand because I toss it in green salads a lot, so this is a great recipe for purple cabbage coleslaw. What do you usually toss into your homemade coleslaw?? There is something about that combo of the crunch and sweet vinegar that make my mouth water every time I crave a good coleslaw. Hope you enjoy this recipe as much as I do during your summer BBQ’s.


1 ½ c. shredded purple cabbage
½ c. shredded carrot
1 green apple, sliced thinly

1/3 of a large yellow onion, sliced thinly
3 T. mayo
1 T. apple cider vinegar
2 packets of truvia sweetener
1 T poppy seeds
Pepper & salt

Toss all your sliced and shredded veggies and apples into a medium sized bowl. Toss together.


For the sauce mix together mayo, vinegar, salt & pepper and truvia. Pour the sauce over your veggies and mix together until it’s all covered with the sauce. Then sprinkle with poppy seeds before serving.
