It’s felt like fall time here in Wyoming. We have had 60 degree weather all week this week. It’s kind of nice for it to cool down a bit. My husband took out window air conditioner out of the window yesterday, the space heater are going at night. One of my favorite things about fall time is all the desserts and fall themed dishes that are served at this time of year. Pumpkin is added to almost everything. It’s the best! I have this great new recipe that I want to share with you all, and of course it has pumpkin in it. These Pumpkin Oat Chocolate Chip Cookies are the best sweet treat you need this fall.
Pumpkin Oat Chocolate Chip Cookies
1 cup of butter, softened
1 1/3 cup o brown sugar
2/3 cup of granulated sugar
1 egg
1 tsp of vanilla
1 1/4 cup of pumpkin puree
2 1/2 cup of flour
1 1/2 cup of oats
1 tsp of baking soda
3/4 tsp of salt
1 3/4 tsp of cinnamon
1/4 tsp of nutmeg
1/4 tsp of ginger
1 3/4 cup of semi-sweet chocolate chips
Preheat oven to 350 degrees. Cream together butter, sugars, vanilla, egg and pumpkin puree in your mixer.
In a large bowl mix together flour, oats, soda, salt, cinnamon, nutmeg and ginger. Pour the dry ingredients into the wet ingredients and mix together well.
Line your cookie sheet with parchment paper. Using a cookie scoop putting one scoop of dough 12 times across the cookie sheet.
Bake the cookies for 14-16 minutes. Cool for a few minutes before placing on cooling rack. Cool before eating.
