Pumpkin Chocolate Chip Cookies

Pumpkin chocolate chip cookies are one of my favorite fall treats to bake, and of course eat. I have this super good recipe that is really easy to whip up, and share with your neighbors and family. Pumpkin has not always been my favorite growing up, but I swear your taste buds change over time. Since I have gotten older I love pumpkin desserts for the holidays.
This time of year is one of my favorites. Living in Wyoming fall time can be a hit and miss. Sometimes we have a beautiful fall. Other times it’s freezing cold and wet. This fall has been amazing 60-70 degree weather, with the sun shining most days. I have loved it. Pumpkin just screams fall time too. I had to make these cookies for a family get together tonight. Enjoy!
½ c. butter, room temperature
¼ c brown sugar
½ c granulated sugar
1 t vanilla
6 T pumpkin puree
1 ½ c flour
¼ t baking powder
¼ t baking soda
1 ½ t cinnamon
¼ t ground nutmeg
¼ t ground cloves
½ c semi-sweet chocolate chips
Cream together butter, sugars, vanilla and pumpkin. In a medium size bowl mix together flour, powder, soda, cinnamon, nutmeg and cloves. Then mix together the dry and wet ingredients. Mix up well. Then fold in the chocolate chips. Chill for 30 minutes or longer.
Once chilled. Lay parchment paper on cookie sheets, and preheat oven to 350 degrees. Place cookie dough about an inch apart on sheet. Bake for 10-12 minutes. If the cookie doesn’t flatten out when baked, once it comes out of the oven flatten them with the spatula. Let cool for about an hour, then eat.
