Nothing says summer like grilling! I love being able to grill in the summer time. Since it’s hot outside it’s nice to keep the heat outside as well. You don’t have to heat up your kitchen by turning on your oven. I love how easy grills and crock pots make meal prep so easy. This recipe has the best of both worlds. You will be using your grill outside and your crock pot inside. I am super excited to share this bold and bright summer recipe. I am a huge fan at anything wrapped in a tortilla. Tacos or fajitas, you name it! These wraps are perfect for the whole family because with Mezzetta’s Sliced Mild Pepper Rings they aren’t spicy. My kids even loved them!

Pulled Beef Wraps

2 pound Beef Roast

Garlic Salt

Pepper

Ranch Dressing Powder

1/2 onion sliced thinly

1 jar of Mezzetta’s Sliced Mild Pepper Rings

1 can of diet or regular Mt. Dew

Toppings: lettuce, cabbage, cheese, sour cream, salsa & tomatoes

First you will need to trim any fat that is on your roast. This makes it easier in the end to shred the beef. Sprinkle your roast with garlic salt and pepper. Place on the grill to brown it up. I do this over a medium heat.

Then cover the bottom of your crock pot with your onions. Place the browned roast on top of the onions. Sprinkle the roast with the ranch powder. I just make sure that it is evenly covered. Pour the whole can of Mt. Dew in the crock pot. Add about half the jar of Mezzetta Sliced Mild Pepper Rings to the crock pot. I also pour some the juice from the jar into the crock pot as well.

Cook on high for the first couple of hours, then turn to low for the last 2-3 hours before serving. Remove roast from crock pot and place in your kitchen aid to shred. Since the roast cooked in the crock pot it will be easy to shred in the kitchen aid.

shred roastToss the shredded roast back in the crock pot with all the liquid and onions. Add the rest of the jar of Mezzetta Sliced Mild Pepper Rings on top. Serve in warm tortillas with all your favorite toppings.
