National Pi Day: Apple Pie

Happy National Pi Day! Pi day is an annual celebration commensuration of the mathematical term π. It is observed on March 14th. It can be celebrated in many ways. By making and eating pie is how I choose to celebrate it. My family and I actually got invited to a National Pi party tonight. There is going to be a competition with everyone that is coming pies. Wish we me luck on my apple pie!

Apple Pie Filling

3 pounds of Fuji Apples

3 T lemon juice

1/3 c granulated sugar

1/3 c brown sugar

1/3 c flour

1 T cinnamon

1 good dash of nutmeg

1 good dash of apple pie spice

2 T butter

Chop and peel all your apples. Toss with lemon juice, sugars, flour, cinnamon, nutmeg and apple pie spice. Set aside until your crust is ready.

Apple Pie Crust

3 cups of all-purpose flour

1 cups of butter flavored Crisco

1 1/2 tsp of salt

1/2 cup water

Sift your flour into a large bowl. Add your salt and mix it with the flour. Now put your Crisco on top of the flour and salt. Next you will need your hands not pastry blender. Sift the flour and Crisco together with your hands. Do this until it is all into pea size balls. Now add your water, and use your hands to mix it in as well. The key with this recipe is using your hands.

Now you can roll out your crust for your pies. Be sure you have plenty of counter space to do so. Sprinkle flour on your counter top as well as rolling pin. Roll away until you get a pie pan shape rolled out. Now fold the crust into thirds. This will make it easier to transfer to your pie pan. Once in your pie pan, unfold. You will need a knife to trim your edges. You can now make your edges nice and pretty now. Add your filling. Then add 2 Tablespoons of butter cut into small pieces on top of apples. Cover with top crust. Take one egg and 2 Tablespoons of water and whisk together. Take a pastry brush and brush the top of your pie with it. Sprinkle a little bit of sugar on top as well. Take a knife and insert it in about 5-6 different spot of your top crust so that it can breathe while it cooks.  Simple as that! Then bake at 400 degrees for 30 minutes.
