The other day I got a ton of cucumbers from a old teacher from high school. Her garden has provided plenty for her and her family, so she is sharing now. She gave me two big bags of cucumbers, so I am looking for lots a ways to use them. I thought maybe I could pickle them, but they are too big. The cucumbers taste so yummy in this slaw though. Hope you enjoy it as much as we did.
1 1/2 c of shredded purple cabbage
1 c of shredded green cabbage
1/2 c of shredded carrots
1/2 of yellow onion, finely diced
1 medium size cucumber, sliced
2 Roma tomatoes, quartered
Mix together in a large bowl and set aside while preparing the sauce.
Sauce:
2 cups cider vinegar
1 1/3 cups water
1/2 cup plus 2 tablespoons ketchup
2/4 cup firmly packed brown sugar or more to taste – (I use more)
3 teaspoons salt
4 teaspoons hot red pepper flakes
1 teaspoon ground black pepper
Mix together in a medium size bowl. Add about half of the sauce to the slaw. Mix all together, and add more if preferred. Serve chilled.
