Lemon Strawberry cake

My mom’s birthday was this week, so we had a little dinner celebration at our house earlier this week. It’s so nice to have a house to have dinner parties at now. Heck with apartment living right? 🙂

My mom didn’t really have any requests for her birthday dinner. She wanted me to surprise her, so that I did. I tried a new recipe for her cake. It turned out great too. Everyone enjoyed it. I loved how moist this cake was. I will be using this recipe for many other cakes. It was so simple because it is a sort-of-homemade cake. It’s from a box, but made even better. I hope that you all enjoy it. It would be a great cake to serve at any birthday, Christmas party, and event you have for the holidays.


1 lemon box cake

1 c. sour cream

3/4 c water

3/4 c vegetable oil

2-3 cap fulls of lemon juice

4 eggs

Mix all ingredients together in mixer. Place batter in a 9×13 pan that is greased, and bake at 350 degrees for 30 minutes. 

Toppings:

1 pint of whipping cream

1 T lemon juice

1 cap full of vanilla

powdered sugar

Strawberries halved

Whip the cream until it is thick. Add a cap full of vanilla, 1 T of lemon juice and about 1/2 cup to 1 cup of powdered sugar. Mix all together, and spread on top of cooled cake. Place halved strawberries on top how you would like. Refrigerate until you serve.
