When I first made these muffins I took them to a mom’s group that my son and I attended. They were a huge hit, so I have continued to make them any time we want blueberry muffins. They are great for any breakfast, brunch or snack for your kids. The lemon and blueberries make a great combination together. This recipe originally made 24 muffins, but with only 4 people in my family I halved the recipe. We are never able to eat 24 muffins very fast. You could freeze these muffins as well to save for a later date if you would like. So you do whatever works for you and your kitchen.
