In celebration of National Tapioca Pudding day I wanted to share my Kozy Shack® recipe with you all. Annually celebrated across the nation, July 15 is National Tapioca Pudding Day!
Some interesting facts about tapioca are:
1: Tapioca is obtained from the fleshy root of the bitter cassava .
2: Tapioca is sold in flake or flour form and as the pellet pearl tapioca.
3: Tapioca flour is widely used in place of wheat flour in regions where it is grown, e.g., South and Central America, Africa, the West Indies, and parts of India.
4: When cooked it becomes transparent and increases in size.
5: It is used to thicken puddings and soups.

Growing up I was not a fan of tapioca pudding. I think that it was a the texture of it. Since being an adult, I have come to love tapioca pudding. I like to make it homemade and toss fruit with it when it’s hot. The best and easiest way to do it is right from the store bought package. My favorite brand is Kozy Shack® too. It comes in the refrigerated area in your grocery store, right next to the yogurts. I think it tastes the best out of all the store bought pudding brands. You have to try it!
This parfait is perfect for these hot summer days. It makes a quick and easy treat for the kids, when they are starving after all those pool parties and outside fun.

1 pint size Mason jar
2 cups of Kozy Shack® Tapioca Pudding Cups
2 Cups of your favorite strawberry pudding
Sliced strawberries

In your mason jar you are going to layer the yogurt, pudding and strawberries until you fill it all the way to the top of the jar. Then top with a couple of strawberries. I did yogurt first, then tapioca and then strawberries. I followed that pattern until the jar was full.
*Tip: you could also layer granola or rolled oats in this parfait as well.
Serve chilled!
