I have had a bag of limes sitting on my counter for the last couple of weeks. I needed a recipe that would use the majority of the limes up. I made this key lime bunt cake to do so. When I took the first bite of this cake it was heaven. It was the most moist, soft, flavor bursting cake ever. This is on the top of my list of great cakes.
The fun part about this cake is it is a very bright green color that makes it fun for your family. The kids will all love eating green cake. Enjoy!!
1 white cake mix
1 family size pkg of vanilla pudding
3 1/2 T lime gelatin
5 eggs
1/2 c. vegetable oil
1 T lime zest
1 c. freshly squeezed lime juice
Icing:
1 c. powder sugar
2 limes, juiced
1 T milk
1/4 t. vanilla
1 lime, zested
Preheat oven to 350 degrees. Mix all ingredients for the cake in your mixer. Mix for 3-4 minutes on high. Flour and grease a bunt cake pan. Pour the cake batter in the pan and bake for 45 minutes.
Mix the ingredients of the icing in a small bowl. Once the cake is cooled pour over the top of the cake. Serve with a little lime zest on top.
