School is out and summer vacation has began. All a sudden here in Wyoming it has decided that it’s going to be summer weather as well. Last night we stayed outside playing until after 9. It’s the perfect time of year out here in the country. No bugs biting you, and it’s still 70 something degrees outside at 9 in the evening. My kids sleep like rocks this time of year because we can play, play , play all day long. This mama loves it! Since its that time of year for bbq’s, family reunions and outside gatherings, we are going to need lots of great summer salad recipes. My husband and I came up with this great Italian Pasta recipe last night for out family Sunday dinner. Everyone loved it, and it’s on my list for go to’s for parties this summer. 2- 3 cups of penne pasta
2 packets of Good Seasons Italian dressing ( follow directions on back of package to prepare)
1/4 yellow onion, diced
2 cups of raw broccoli chopped
2 cups of cherry tomatoes
1/2 cup of chopped carrots
1/2 cup of diced red cabbage
1 cup of Parmigiano Reggiano cheese ( I found mine at Costco, but I am sure it’s at any local grocery store)
Cook pasta, and let cool. Mix together the Good Seasons Italian Dressing following the directions on the back of the packet. Chop up all the veggies. Toss the pasta and veggies together in a large bowl. Sprinkle the cheese on top, and toss. Pour about half the dressing on top, then toss. Pour the other half right before serving and toss. Keep refrigerated until time to serve.
