Instant Pots are all the rage these day in the cooking world. Well I don’t know about cooking world but in this mama’s world. My in-laws got me one for Christmas and I am sold on it. I love how I can come home have about an hour before dinner time and have it done with my instant pot. If you aren’t sure what a Instant Pot is or have been wanting one you need one now. The Instant Pot is a programmable pressure cooker that speeds up your cooking time 2 to 6 times and using less energy as well. Also the clean up for dinner is quick and one pot to clean from cooking. I have made several recipes in my Instant Pot since being gifted it for Christmas. I am going to be sharing lots more of these great recipes I have tried. I am excited to share this simple Instant Pot Vegetable Beef Soup with you. It’s perfect for the cold winter nights. My kids even loved it!

Instant Pot Vegetable Beef Soup
1 pound of ground beef
1 small onion, diced
1 tsp of garlic powder
1 can of stewed tomatoes, with the liquid
1 1/2 cups of water
2 carrots, diced
1 stalk of celery, diced
2 medium potatoes, skins left on, diced
1 1/2 Tablespoons of tomato past
1/4 tsp of salt
1/4 tsp of pepper
1 tsp of parsley flakes
1/4 tsp of dried oregano
1: Turn your Instant Pot to SAUTE; add garlic powder, onion and beef. Saute until beef is cooked through.

2: Add can of stewed tomatoes with liquid. Stir in water, diced vegetables and seasonings. 
3: Place lid on the Instant Pot and close the vent to seal. Press the manual button and set the time for 4 minutes. Once the timer beeps, press cancel and turn the valve form seal to vent to release the pressure. Once all the pressure has released you can remove the lid. 
Dinner is served! It’s as simple as that! Enjoy!
