Usually I am super lazy when it comes to making Spanish Rice. I go to the store and buy a couple of the Spanish Rice mixes or I don’t make it at all. The mixes are actually not that bad at all. When I decided to make it for our little Cinco de Mayo celebration last night my husband was surprised. He was for sure I was just going to go buy a packet. It made me laugh, but he loved my new Spanish Rice recipe. It turned out great. I love coming up with great recipes and then having everyone love it. Makes me feel great! I hope you all enjoy this recipe too. Oh and remember it’s not hard to make I promise. You pretty much need the same about of effort for this recipe as you do to go to the store and buy a packet 🙂 Enjoy!
1/2 diced onion
4 T of olive oil
2 cups of water
2 cups of white rice
4 tsp of taco seasoning
1/2 tsp of cumin
2 -8oz cans of tomato paste
1 small can of diced green chilies ( optional)
6-7 slices of cooked bacon
Put all the ingredients in the pot and boil for about 20-25 minutes. Stir a few times to make sure it’s not sticking to the bottom of the pot. Meanwhile cook your bacon. Let it cool a little and cut into smaller bacon bits. Once the rice is cooked all the way through add the bacon and mix it up. Serve right away!
