Homemade Pancake Mix

Pancakes are must have in my little family. Every morning I ask my 2 year old Chloe what she wants for breakfast. I will give her options of pancakes, french toast or waffles. She always screams with excitement pancakes! The girl loves them, and so do the rest of us. My favorite thing to do is double the batch so that we can eat them for a couple of days. I just toss them in a Ziploc bag once they cool and place in the fridge for the next morning. This homemade pancake mix recipe is so simple because you usually always have everything for it. No more store bought pancake mixes anymore! Once you use this recipe there is no going back. Trust me. It’s that easy.


1 egg

3/4 cup of milk

1 cup of flour

2 TB of oil

1 TB brown sugar

1 TB baking powder

1/2 tsp salt

Mix together all the ingredients really well and start heating your girdle or pan on the stove up. I usually cook my pancakes over medium heat.

I like to make my pancakes small because then your batter goes farther, and you can eat more right? 🙂 Cook on one side until you see bubbles form. The bubbles will start to pop almost. Then you will know it’s time to flip the pancakes.

There you have it. No more slaving for ever over getting the perfect breakfast for your kids. All they will want are these super easy, yummy and quick homemade pancakes. Enjoy!

  • Homemade pancake mix is something I have a love-hate relationship with. One thing I have noticed to make it better, is to make the batter ahead of time and refrigerate it overnight. Something about it makes them fluffier for me. Thanks for sharing your recipe 🙂
