This was a huge hit in my house last night. I can’t take a whole lot of credit for it though. It was all my husband being the chef. In my husbands family we will always ask each other how many vegetables you had with your Sunday dinner. It’s a challenge to see who had more vegetables in one meal then the other person. It’s a fun game we play. For example if you had a green salad we would count the lettuce, tomatoes, cucumbers and carrots. The side dish with our Sunday dinner this week included three vegetables. I say we won the challenge with this side dish. It really was amazing. My husband come up with it all on his own too.
Green Bean Medley
1 bag of frozen steam-able green beans
1 sliced medium purple onion
2 slices of bacon, diced
1 sliced yellow bell pepper
4 TB of Rice Vinegar
Pepper and Salt
Step 1:
Cook your bacon until cooked through
Step 2: Remove your bacon from pan and cook the purple onion in the bacon grease until no longer crunchy. If you don’t want to cook with the bacon you could use a little bit of olive oil.
Step 3: Add your sliced yellow bell pepper to the onions cooking them down until the are tender as well.
Step 4: Add the bag of steam-able green beans and add the bacon back into the pan. Add the pepper and salt and rice vinegar as well. Cook for about 6-7 minutes more until the beans are nice and hot.
I loved the mouth watering taste that this dish had. The the rice vinegar was a great way to combine with all the sweetness of the bell pepper and beans.

For the grilled steak we always just cover our steaks with garlic salt and lemon pepper. You add as much seasoning as you want. Then my husband once again is the grill master, and grills it just right. I will be getting a post up soon about grilling.Mean while enjoy this mouth watering dish.
