I am still loving this Pesto Spread that I got from Costco a few weeks ago. We just finished it up today for lunch with some super yummy grilled sandwiches. We do a lot of grilled cheese sandwiches for lunch around here, so why not put pesto on them. I came up with this idea a few weeks ago when we first bought the pesto. They are big hit around here, and super easy to put together. They make for a perfect lunch date.

 2 slices of wheat bread

 butter

 2-3 slices chicken lunch meat

 3-4 slices of cheddar or your favorite cheese

 1 T pesto spread

 Take your first slice of bread butter one side of it lightly. Place it in your pan and spread pesto on the inside. Place a few slices of chicken and cheese on the inside. Then place a one side buttered slice of bread on top. Grill each side until golden and the cheese has melted inside.
