I am being creative in the kitchen again with my cookie recipes. I needed a quick cookie recipe for my young women last night for our service planning activity. Like I have said in the pass keep cake mixes on hand in your food storage. They are always a great way to whip up some yummy cookies. This recipe has just a cheap fudge cake mix in it. Which made these cookies super easy to prepare. In no time I had 2 doz cookies ready to go. I also sweetened up my peanut butter cookie recipe with a rolo as well. I knew that just 2 doz cookies was not going to be enough cookies for a bunch of 12-18 year old girls. So once I was done baking the fudge rolo cookies I mixed up the peanut butter ones. 4 doz cookies did the trick. The girls loved them!
Fudge Rolo Cookies
1 Fudge or Devil Food box Cake Mix
1/3 cup of vegetable oil
2 eggs
Rolo’s
Mix together the cake mix, oil and eggs. Once that is all mix together preheat oven to 350 degrees. Unwrap your rolo’s. I unwrapped 12 at a time because that is how many cookies I placed on a sheet. Take a cookie scooper and scoop out one scoop of the mix. Roll the mix into a ball. You can either place the rolo on the inside of the ball (which is what I did) or smash it on top of the cookie ball. Place on a greased cookie sheet. Bake for 10-12 minutes. Let cool for a few minutes before removing from the cookie sheet.
Preheat your oven to 375 degrees
Mix together
1 3/4 c flour
1 t baking soda
1/2 t salt
1/2 c sugar
1/2 c brown sugar
1/2 c shortening
1/2 cup creamy peanut butter
1 egg
2 T milk
1 t vanilla
Once all the ingredients are mix together it’s time to roll out the cookies. Taking a cookie scoop, scoop out one scoop and roll it into a ball. You can place the rolo inside the ball or smash it on top of the cookies. Place on a greased cookie sheet. Bake for 10-12 minutes. Let cool or a few minutes before removing from the sheet.
